There are a few ingredients I buy almost automatically, and cucumber is one of them.
I do not usually have a complicated plan for it. I just know that if there is a cucumber in the fridge, I can make something useful out of it. It works in salads, wraps, rice bowls, sandwiches and quick side dishes, and it takes almost no effort to prepare.
That convenience is probably the main reason it became a staple for me.
Cucumbers are also made mostly of water, which makes them a refreshing ingredient, especially on hot days. They provide small amounts of nutrients including vitamin K, and keeping the skin on can add a little more fibre. I would not treat cucumber as some kind of nutritional powerhouse on its own, but it fits very easily into an overall diet with plenty of vegetables.
What I like most is how much freshness it can add to a meal that otherwise feels quite heavy.
If I am having rice with grilled chicken or tofu, I will often slice cucumber on the side with tomatoes and a squeeze of lime. If lunch is a wrap, I add cucumber for crunch. Even a basic tuna sandwich feels better to me with thin cucumber slices tucked inside.
One of my easiest cucumber dishes is a quick smashed cucumber salad. I lightly crush the cucumber, chop it into pieces and toss it with rice vinegar, a little soy sauce, sesame oil and chilli. It takes only a few minutes, but it gives a simple rice bowl much more contrast.
I also like cucumber with Greek yogurt. Mixed with yogurt, lemon, garlic and herbs, it becomes a quick sauce or dip that works with grilled fish, chicken, falafel or roasted vegetables. It is one of those things that feels more interesting than the effort required.
For breakfast or lunch, I might make wholegrain toast with cottage cheese, cucumber, black pepper and a few seeds. Another easy option is a chickpea bowl with cucumber, tomatoes, herbs and a simple olive oil dressing.
Cucumber is also useful when I want a snack that feels more substantial than just grabbing something sweet. I will sometimes pair cucumber slices with hummus, cheese or a boiled egg, depending on what I have.
I think that is why cucumber has lasted in my regular shopping routine. It is not exciting because it is trendy. It is useful because it fits into so many different meals without demanding much attention.
Some ingredients earn their place in the fridge by being impressive. Cucumber earns its place by being reliable.
